Easy Cupcake Recipe For Mother’s Day

Show your mother how much you care for her by baking these amazing cupcakes for her. They are so easy to make and will disappear quickly from the plate if you don’t hide them away.

125g butter, softened
125g sugar
2 eggs
125g flour
2 Tablespoons milk
half a Tablespoon baking powder
For the topping
4 Tablespoons strawberry jam (optional)
whipped cream
red food coloring
sprinkles (optional)

Preheat the oven to 200 C degrees. Beat together the butter and sugar in a bowl until light and fluffy. Add the eggs, flour, baking powder and milk to the bowl and beat until the mixture is smooth.
Divide the mixture between the paper cases and bake until the cakes have risen and are just firm to the touch in the center. Remove the cakes from the oven and transfer them to a wire rack to cool.
For the topping beat the strawberry jam into the whipped cream. Add a little red food colouring to give the cream a deeper red colour. Fill the piping bag with the mixture and pipe a swirl onto each cupcake. Sprinkle.
