Artichokes with Garlic dip


Spring is the BEST time of year isn’t it? I don’t know about you, but we already have gorgeous warm weather here in Macedonia. Me and my kids are taking advаntage of it every minute. I’ve put together one of my very favorite “Spring” recipe that is packed with everything delicious!
You are going to love it. Hope you enjoy! I’m thrilled to share my Artichokes with Garlic dip recipe with you today!


For the dip

1 egg yolk
1 head garlic (chopped)
1 teaspoon mustard
1 teaspoon white vinegar
juice of 1 lemon
1 cup oil
salt and ground black pepper

For the artichokes

5-6 artichokes
3 Tablespoons oil


Here is how you can make the dip: Beat the yolk with the vinegar and mustard in a bowl. Whisk in the oil, to make a thick mayonnaise. Put the chopped garlic into the mayonnaise and whisk smooth. Season the sauce with salt, pepper, and lemon juice, to taste.
To prepare the artichokes: Heat the oil in a skillet and drop in the artichokes in the oil and cook until they are brown on all sides. Take them out and drain them from the oil on a paper towel in a plate.

Serve with the dip.
